Grandma tastes Anna's Danish herring and finds it surprisingly close to kimchi — for a foreign dish. Judging something against what you expect of its kind is everyday talk, and 치고는 is how Korean does it.

초보 요리사치고는 칼질이 꽤 빠르네요.
For a beginner cook, you're pretty quick with a knife.
