I thought … (and I was wrong) · I didn't know …
a list of surprises is really a list of wrong guesses. -더라고요 tells what you found; this pattern tells what you had believed before you found it — 'I thought they would bring the water to the table' — and what you simply never knew.
Example
한국 사람들은 다 매운 음식을 잘 먹는 줄 알았어요.
I thought all Koreans were good with spicy food.
